"Tasty Red Snapper Barbecue Fish"

Red Snapper
Ingredients

- 1 whole red snapper

- 3 tablespoons of orange juice

- 3 tablespoons of lemon juice

- 1 tablespoon of brown sugar

Method

Split and butterfly the snapper. Combine orange juice, lemon juice and sugar in a mixing bowl. Mix ingredients together thoroughly.

Place the snapper in the bowl and make sure it gets fully covered in the sauce. Place the bowl in the fridge and leave for 2 hours.

Pre-heat grill to a medium heat and place the fish on the grill skin side down. Grill for about 5 minutes and turn over grilling for another 4 minutes or until done. The fish is ready when the juices start boiling.

"Grilled Trout Barbecue Fish Recipe"

BBQ trout
Ingredients

- 2 whole trout's (1 kg each)

- 2 tablespoons of olive oil

- 1 tablespoon of minced rosemary

- 2 cloves minced garlic

- 2 tablespoons of minced parsley

- 1 teaspoon of salt

- 1 teaspoon of black pepper

Method

In a mixing bowl combine olive oil, rosemary, garlic and parsley. Slit the inside of the trout's and spread the mixture inside evenly.

Before you start grilling fish always coat the grill grid with some olive oil.

Pre-heat the grill to a medium heat and grill the fish for 4 - 5 minutes on each side until done. Remove the fish from grill and serve straight away! Tasty!!


"Seared Barbecue Tuna"

Ingredients

- 6 tuna steaks

- 1 cup of white wine

- 2 tablespoons of butter

- 1 tablespoon of wasabi paste

- 1 tablespoon of olive oil

- 4 cloves minced garlic

- 1 tablespoon of soy sauce

- 1 tablespoon of salt

- 1 tablespoon of black pepper

Method

This is a must recipe for grilling fish. To make the sauce combine butter, wasabi paste, soy sauce and garlic in a saucepan. Mix ingredients together over a heat and bring to a simmer.

Pre-heat the grill to a high heat. Coat the tuna steaks with olive and place on the grill. Sprinkle over salt and pepper to season. Grill steaks for a minute and a half on each to sear the outside.

Remove from grill and serve with the sauce, one of my favourite grilling fish recipes. (awsome!)
