"Lemon BBQ Chicken"

Chicken thighs Ingredients

- 4 chicken thighs (skinless & boneless)

- 1 teaspoon of salt

- 1 teaspoon ground black pepper

- 1 teaspoon of olive oil

- 4 squash cut into wedges

- 1 lemon

- 2 tablespoons of lime juice

Method

In a mixing bowl add olive oil, lime juice, salt and pepper. Slice lemon in half and squeeze out the lemon juice into the bowl.

Place chicken thighs in the bowl and leave in the fridge for 30 minutes.

Pre-heat the grill to a medium heat and using direct heat, place chicken pieces and squash onto the grill. Grill for 10 to 14 minutes until done.

Remove from the grill and cut chicken into strips and the squash wedges in half.

Serve with any left sauce, this is a great for summer! (yum, yum!!!)


"Onion & BBQ Steak Sandwich"

steak sandwich Ingredients

- 1 500 gram flank steak

- 2 tablespoons of balsamic vinegar

- 1 tablespoon of brown sugar

- 2 tablespoon of Soy sauce

- 2 teaspoons of ground thyme

- 1 onion sliced

- 2 tomatoes sliced

Method

In a mix bowl add vinegar, sugar, Soy sauce and thyme. Mix ingredients together and place the steak into marinade.

Leave in the fridge for an hour.

For easy handling place the onion slices through the metal skewer. Pre-heat grill to a high heat and place steak and onion slices on the grill.

Grill for 12 - 15 minutes until done turning occasionally.

Once done transfer steak and onion slices to a cutting board. Thinly slice the steak across the grain and separate onions into rings.

Serve with brown rolls or pita topped with onions, steak and tomatoes. (Who would have thought grilling healthy would have tasted so good?)


"Grilled Turkey"

turkey Ingredients

- 2 turkey slices (300 grams)

- half cup plain yogurt

- 1 teaspoon of cumin

- 1 teaspoon of coriander

- 1 teaspoon of salt

- 1 clove garlic minced

Method

1 of our personal favourite healthy grilling recipes!

Combine cumin, coriander, salt and garlic in a mixing bowl. Mix ingredients together and place turkey into sauce. Leave in the fridge for 2 hours.

Remove turkey from the fridge and just before grilling coat the turkey in the yogurt. Pre-heat the grill to a medium heat and place the turkey on the grill.

Grill for about 6 minutes until the turkey looses the pink colour. Serve with rice or potatoes.
