"Memphis BBQ Pulled Pork"

Pulled pork sandwich Ingredients

- 1 boneless pork but (shoulder)

Rub

- 1 tablespoon of salt

- 1 tablespoon of paprika (hot)

- 1 tablespoon of onion powder

- 2 teaspoons of cayenne pepper

- 2 teaspoons of black ground pepper

Sauce

- 2 minced onion

- 1 cup of red wine

- 2 cloves of minced garlic

- half cup of brown sugar

- half cup of mustard

- 2 cups of ketchup

Method

For the Memphis style rub combine rub ingredients in a mixing bowl.

Mix into a paste and rub onto the shoulder of pork and cover it in a plastic wrap. Place in the fridge for an hour.

The Memphis style sauce place the onions with the minced garlic in a sauce pan. Add red wine, sugar and the mustard. Bring ingredients to a simmer, then add the two cups of ketchup and let ingredients simmer for fifteen minutes.

Pre-heat smoker to 225 degrees smoke the shoulder of pork for about 8 hours. Once done wrap the shoulder pork in aluminium tin foil and leave to settle for an hour.

Unwrap the shoulder pork and shred. Serve on a white or brown bun. Add bout a tablespoon of sauce when serving. Enjoy!!



"Traditional BBQ Pulled Pork"

Pulled pork Ingredients

- 1 boneless pork butt (shoulder)

Rub

- 2 tablespoons of salt

- 1 tablespoon of ground black pepper

- 2 teaspoons of cayenne pepper

- 2 tablespoons of paprika (hot)

Sauce

- 1 cup of vinegar

- 1 cup of water

- half cup Bourbon whiskey

- 1 tablespoon of ground black pepper

- 2 teaspoons of salt

- 2 red peppers minced

Method

Combine rub ingredients in a mixing bowl and mix thoroughly. Coat the pork shoulder and wrap in plastic, place in the fridge for 8 hours.

For the sauce mix the one cup of vinegar and the cup of water in a sauce pan. Mix in the Bourbon whiskey and the black pepper.

Add the peppers and some salt, let ingredients simmer for fifteen minutes.

Pre-heat the smoker to 200 degrees and smoke the shoulder of pork for six hours. Baste the homemade sauce on the pork every twenty minutes the last two hours of cooking.

Shred the pork and serve with the remaining sauce. (oh yes, delicious!!)
