"Grilled Cabbage!"

Ingredients

- 1 large cabbage

- 1 tablespoon of garlic powder

- salt & pepper for taste

Method

Cut cabbage into 8 wedges and remove the core. Place all wedges on a piece of aluminum foil that's big enough to wrap the whole cabbage.

Season with garlic powder, salt and pepper. Seal the cabbage in the foil and pre-heat grill to a medium heat.

Grill for 30 to 40 minutes until cabbage is tender, one of my favourite BBQ vegetarian recipes. Oh yes, a tasty vegetarian barbecue! Enjoy!


"Grilled Eggplant!"

eggplant Ingredients

- 5 small eggplants

- 1 tablespoon of salt

- 1 tablespoon of paprika (sweet)

- 3 teaspoons of brown sugar

- 2 tablespoons of lime juice

Method

In a mixing bowl combine salt, paprika, sugar and lime juice. Mix ingredients together and set one side. Peel the eggplants and slice in half diagonally.

Coat the eggplant with the ingredients and leave at room temperature for 20 minutes. Pre-heat grill to a medium heat and place the eggplant on.

Grill for 15 minutes turning regularly. Serve as a main or side dish.


"Grilled Potatoes & Onions!"

red onions Ingredients

- 4 potatoes (sliced)

- 1 red onion (sliced)

- 1 teaspoon of salt

- 1 teaspoon of ground black pepper

- 2 tablespoons of butter

Method

Place slices of potatoes and onions on a square piece of tin foil. Big enough to fold and hold the vegetables.

Flavour with salt, pepper and butter.

Pre-heat grill to a medium heat and use indirect grilling method.

Grill for 30 minutes with the lid closed. Serve hot right off the grill.
