Grilling Mahi Mahi

The Mahi Mahi is a ray-finned fish normally found in tropical and
sub-tropical waters worldwide.
Although also known as 'dolphin-fish' it has no relations to
the dolphin or other mammal species.
Mahi-Mahi is grilled just like most types of fish. It is a delicious,
low-fat and high protein meal. Making it ideal to cook on the barbecue.
Great...let's get our fish ready for the grill!!
"Preparation" - Grilling Mahi Mahi"
- Mahi-Mahi can be grilled as whole fish or cut into fillets.
- Rinse the fish under a cold tap and pat dry with a paper
towel.
- Season the fish with fresh spices such as thyme, rosemary
and oregano.
- Drizzle a small amount of olive oil or salad dressing to
give the fish a layer of protection.
- Use aluminum foil grilling the whole fish, this will keep it
from burning and drying out. After seasoning place in a piece of foil
big enough to enclose it.
- When preparing Mahi Mahi fillets or steaks you may grill
them straight on the grill without any foil.
- Just make sure the pieces are well coated with olive oil to
prevent them from drying out.

"Barbecuing
Mahi Mahi"
- Pre-heat grill to a medium heat.
- Place fish wrapped in foil onto the grill. Grill for
approximately 10 - 12 minutes.
- Close the lid to create an oven effect and even heat
circulation. The meat will change to a 'cooked' colour when it is done.
- When grilling without foil, pre-heat grill to a high heat.
- Sear the outside for a minute on
eachside.
- Turn temperature down to a medium heat and slow cook the
inside.
- Fillets and steak are done within 4 - 5 minutes
on each side.
- Serve straight off the grill, goes great with vegetables and
rice.
